Great Recipes when the Meal Plan is missing.

He everyone, this is Trish reporting to say, I AM SO SORRY!  I am really bumbed that I have missed a second week in a row for not posting a meal plan.  I would love to blame it on the start of school, but as you know we home school and in this case every day is the start of school.  Unfortunitely, I have been so swamped lately that I just haven't been able to even create a plan.  In fact, I have spent the last few weeks feeding my family from our stockpile because I didn't have time to go shopping.

I wanted to give you a few links to some recipes, to make up for my inabilities.

Meal Plan 7/7-7/13

Now understand.  We are mostly giving you ideas.  Yes, it looks like an entire meal plan, but some things you just have to insert yourself.  Next, these recipes are based on serving 4 people, so do the math to figure out how much you need to feed your crew.

Meal 1: this is a Paula Dean recipe, so I am sure it will be amazing.  This will be good to use some of the stock piled pasta on.  I look forward to a huge bowl of vegetables.  I will probably use a variety of vegetables that are just in season to give it that summer feel.

Meal 4: I love honey Dijon chicken.  I remember as a kid have this chicken with broccoli cheese rice and green beans.

Meal 5:   I love wings, but being a momma at home, I make them myself.  I am always looking for other ways to have them.  SO why not coca-cola.  I should have paired this with a coca cola cake.7.8mealplan - Page 032

Dessert: We always enjoy making these and eating these.  My husband will take these over a swiss cake any day.  This is easy and a food processor will make it effortless. 7.8mealplan - Page 033

Use it! 5 day Meal Plan:6/30-7/6

I am working on the better late than never thought right now.  Everyday since I started this meal plan, I have had obstacles or what I like to call I have been sucked into my 4 little tornados and spit back out, to be sucked into another.  SO I am a bit dizzy.

Meal 1: I plan to do this one for an evening dinner at the beach.  I plan to pack it warm and take off to watch the sun set.  I will probably substitute the ripe olives for canned black olives.  I also might use mozzarella cheese instead of the parmesan cheese.

Meal 2:  I look forward to this one!  Fish is fast food for me!  It is good and doesn’t take long either.  So yum!

Meal 3: I made this tonight.  Now as I told you before, my family loves rice.  Rice is our simplest way to stretch dinner too.  So we served this stew over rice.  We had a hard-crusted bread from the bakery to ad to this meal.  I did pass on the veggies, instead I buy the bags of frozen vegetable soup mix or gumbo mix instead.

Meal 4: Move over shake and bake, because I did it all by myself!  Ha!  Here we go, we can spice up some faux fried chicken anyway we want.  We might be eating this with potato salad and watermelon, haven’t decided yet.

Meal 5:  I love tex-mex and this should be a pleaser!  I did get this one from Controling My Chaos, so hope over there to print it off.

I have not tried all the recipes.  Some I gathered a while back and already used, while, others I have just recently found and am waiting to try them.

Meal 1: You can make this as a stew on top of the rice or shred the chicken and serve taco style.  If you haven’t noticed, my family LOVES rice.

Meal 2:  This is by far, one our favorites!  I originally found this because of doing weight watchers, but not to worry, it will not taste like you are eating diet food.  For me, this is like the grown up version of beans and weenies.

Meal 3: How many times can we just eat BBQ Ribs?  I figured we need to get some sweetness in with this dreaded heat.  So a little tangy and some sunshine would fit nice with this one.  I grabbed this off of the www.cooksrecipe.com site and it had recommended it with cumin flavored rice ( I assume dump a TB of Cumin while cooking the rice) and a cucumber salad.

Meal 4:  This is supposedly amazing!  My biggest suggestion is to shop around for the garlic.  I will probably pick up the peeled whole garlic cloves from Sam’s for this one.  I might even add mushrooms to it for an added flare.

Meal 5: I love sweet and sour pork this way.  I will be serving mine up with sautéed carrots, peppers, and onions on a bed of rice.

Dessert: I really want to rename these as the mommy treat.  I picked up Wal-mart generic for the condensed milk and instant coffee crystals.  I am hijacking the kids popsicle maker for ME! 
I am so excited to by pass the expensive iced coffee for an Ice Pop with a kick for these hot summer days.

So this is our first kick off to help encourage you to take advantage of the current sale ads.  We hope you enjoy.  We have the 5 meals with a listing of where a majority of the ingredients are on sale, underneath the listing is the recipes.
Now understand.  We are mostly giving you ideas.  Yes, it looks like an entire meal plan, but some things you just have to insert yourself.  Like, just add a veggie, you know what you have and what you like, so just add it in.  Next, these recipes are based on serving 4 people, so do the math to figure out how much you need to feed your crew.  Last, we are just keeping it interesting.  We do not want to post a detailed recipe, we just don’t have time to cook something like that.

Meal 1: This recipe is taken from Rick Bayless’s cookbook Everyday Mexican, you can check it out at the Mid-County Library.  The Cutting was a little tricky, but with some elbow grease and no fear of breaking bones, you will be fine.   This will serve about 4.

Meal 2:  This is a recipe just a basic crock pot rib recipe, as written it serves 4.  We had a lot of great sales recently on BBQ sauce.  The potatoes are crazy good.  Now just add a great veggie and dinner is done.

Meal 3: This recipe is direct from http://www.controllingmychaos.com/.  You need to head over to her site to get the recipe card.  Jill does a wonderful job with her recipes and I have a hardcopy of everyone of hers in my personal recipe box. 
A nice part about this recipe, we can finally use some mustard that we got an awesome deal on! I will be adding a rice or couscous side with a mixed vegetable.   You can also serve with with steamed red potatoes.
Meal 4: This recipe is actually from the Mama Mancini website.  I would probably use any left over rice meal 3.  Also, I would use the best deal on peppers, so if the price is right I might go with a bell pepper instead.  This should be a nice little cheat night for dinner with a big impact.  To me a stuffed pepper covers the basics of meat, starch and veggie, so I consider it a complete meal.

Meal 5:  So I found this pork chop recipe on the ALL YOU site.  I am going to skip out on the cream and just use milk, because I don’t want to buy cream just for this recipe.

Dessert!:  You can always skip out on the frosting recipe and just buy it made, but I truly believe it is better from scratch and cheaper.  This cake is super easy and everyone will think might be the new Martha Stewart when they try it.
